My office manager is deleating the history every day keeping me from seeing what she is doing on my time. I know she uses the computer for things she is not supposed to and will not be truthful when I aske her what she has been using my computers for. I have see the computer with actual business items on the screen but they are deleated at the end of the day. The list is completely empty with the exception of what I have left intensionally to verify the history is working.

If she is Your Boss, then don't mess with her. Put your head down and work quietly. Turn your computer off when you take an extended break to discourage her from using your RIG. Get to work before her and leave after her.
Absolutely NEVER use the computer for personal use. Keep a written log of when you came in and when you took breaks. If you ever get in trouble for computer use, then show the log, and tell management that she was on your machine.
